Step 1
Preheat oven to 400 degrees. Add the chicken to a Pyrex dish and season both sides with salt, pepper and garlic powder.
Step 2
In a small bowl, add balsamic vinegar, honey, garlic, basil paste, and olive oil. Whisk until well combined.
Step 3
Pour mixture over the seasoned chicken breasts and add cherry tomatoes to the side of the chicken. Place the tomato slices on the top. Cover with aluminum foil and bake on for 25-30 mins.
Step 4
Once done, remove from the oven and add mozzarella slices to the top. Bake five minutes more until the cheese is completely melted.
