Instructions

Step 1
In a large nonaluminum frying pan, melt butter with oil over medium heat.
Step 2
Season pork with salt and pepper
Step 3
Add pork and garlic. Cook, turning, until pork is lightly browned, about 5 minutes a side.
Step 4
Add vinegar and bring to a boil. Add tomatoes and parsley. Cover, reduce heat, and simmer 20 minutes, until pork is tender
Step 5
Remove pork to a serving platter. Cover loosely with foil to keep warm.
Step 6
Remove garlic cloves; peel under cold water, mash, and return to sauce. Pour sauce over pork and serve hot over rice.
