Instructions
Step 1
Preheat oven to 400F. Dice sweet potato into cubes, toss in olive oil, a pinch of salt, and cinnamon. Bake for 20-30min.
Step 2
Drain black beans and corn. Pour into a large pot. Warm on med-low setting with butter alternative, pinch of salt, and pinch of pepper. When the potato is almost done, squeeze in lime juice and stir.
Step 3
Serve.
