8 ozchicken breast

sea salt
pepper
8 ozmozzarella
fresh sliced
600gpeaches
pitted
½ cupfresh basil
chopped
½ cupbalsamic glaze

Step 1
Heat the grill to medium heat
Step 2
Butterfly-cut the chicken. Spray the chicken with cooking spray and sprinkle with sea salt and pepper. Grill about 5 minutes per side or until fully cooked through.
Step 3
Slice the peaches in half and remove the pit. Spray the inside of the peaches with cooking spray and place face down on the grill. Leave the grill open and let cook for 2 minutes. Flip over and cook for an additional minute. Remove from the grill.
Step 4
Spray the asparagus spears with cooking spray and sprinkle with coarse sea salt. Add to the grill and cook for 2-3 minutes.
Step 5
Transfer the chicken to a plate and top each serving with 2 oz fresh mozzarella, 150g grilled peaches, fresh basil and 2 Tbsp balsamic glaze. Enjoy the asparagus on the side.
