Asparagus Roast Beef Roll-up

You can make these small for an appetizer or small plate, or keep the asparagus intact for a crisp side dish.
You can also use lean deli roast beef: ask the butcher to slice it medium-thin. You need it to be able to roll, yet also stay together. Prepackaged roast beef is too thin and will fall apart when you try to roll it.

Step 1
Line a cookie sheet with parchment paper. Put cleaned asparagus spears on the cookie sheet, then spray lightly with olive oil. If you do not have a mister, pour a scant teaspoon of oil in the palm of one hand, then handle the spears, coating them lightly with oil. Wipe your hands with a paper towel to get most of the oil off, then wash your hands. Sprinkle the spears lightly with salt and pepper. Broil for few minutes until bright green. *alternatively, you can put the spears on the gas grill or bbq for a few minutes or steam them. If you steam them, you will need to immediately put spears in ice water to stop the cooking.
Step 2
In a small bowl, stir together the horseradish and sour cream. Salt and pepper it to taste. If you need to thin the sauce, just add a few drops of milk then stir. It should be spreadable, but not too slack.
Step 3
If making as an appetizer, cut the spears into 1” pieces which can be rolled independently or in groups of three. If serving as a side dish, keep whole.
Step 4
To assemble, place a slice of roast beef on the clean work surface, then spread 2 TBL of the horseradish sauce on it. Place the bottom of the asparagus spear at the short end of the slice, then roll up so the long end of the slice wraps around the spear upwards to the tip.
Step 5
If serving as an appetizer, put the cut asparagus section on the roast beef and spread with horseradish. After one rotation, cut the beef with a knife and secure the spear with a toothpick. Set the next section on the beef, and continue until all the asparagus is rolled.
Step 6
These can be served warm or chilled.
