Instructions
Step 1
Preheat oven to 350F. Heat oil in ovenproof pot over medium heat. Add onion, garlic, and salt and cook for 5 mins or until onion is translucent but not browned.
Step 2
Add all spices, pistachios, and rice and saute for another minute (until fragrant). Stir in water and cover pot and bake 45 mins (or until rice is cooked through).
Step 3
Keep pot covered, let it stand off the heat to steam for 10 mins.
Step 4
Meanwhile, blanch the peas in boiling water for 2 mins then shock in ice-water bath to lock in color. Before serving stir in peas and parsley.
