Ingredients

1 ½ cupall purpose flour
1 tspbaking soda
1 tspbaking soda
½ tspcinnamon
salt
3bananas
ripe
⅓ cuppecans
chopped, or nut of choice
⅔ cupbrown sugar
½ cupunsalted butter
melted
1egg
1 TbspMolasses
optional, for spongier texture
1 tspvanilla
For the topping
Instructions
Step 1
Combine flour, both baking powder and soda, cinnamon, and pinch of salt in small bowl
Step 2
In a bigger bowl combine bananas, chopped pecans, sugar, melted butter, egg, and vanilla. Add molasses for spongier texture (1 tbsp) but not needed
Step 3
Add dry ingredients to wet ingredients and stir just until combined
Step 4
Put on lined cupcake tray or buttered loaf pan
Step 5
For toppings mix flour, sugar, melted butter, and chopped pecans
Step 6
Disperse topping on batter evenly
Step 7
For muffins: Bake at 375F for 18 minutes
For loaf: Bake at 375F for 45 minutes
