Instructions
Step 1
Mix the salt into the flour. Then, slowly stream in the water, stirring constantly.
Step 2
Knead the dough until it just comes together, about one minute, then cover and let rest for 30 minutes.
Step 3
Knead the dough for about 2 minutes. Then, take the more uneven side and pinch it together.
Step 4
Pinched side down, seal the dough closed by pulling it across your work surface in multiple directions, about twelve times total.
Step 5
Roll the dough into a log, and cut into 4 even pieces. Pinch together all the cut sides of the dough before rolling the pieces into roughly 6-inch logs.
Step 6
Place the oil in a bowl, and roll the logs in the oil until thoroughly coated. Cover and let rest two hours.
Step 7
Start a pot of water over high heat, hopefully bringing it to a boil by the time you're done shaping the first noodle.
Step 8
Flatten the log with a rolling pin, and firmly press a chopstick into it lengthwise.
Step 9
Holding the ends of the noodle lightly between your palms and thumbs, smack the middle down on the countertop about ten or so times, stretching the noodle and hopefully having a lot of fun in the process.
Step 10
Now, pull the noodle apart where you made the indentation with the chopstick, creating either an O-shaped flat noodle or a really long flat noodle depending on your capacity for restraint and personal preference in noodle shape.
Step 11
Immediately cook in rapidly boiling water for about one minute, until it floats. You can ideally blanch some greens in this water while you cook the noodles.
Step 12
Serve the noodles topped with chili oil, soy sauce, sliced green onion, and whatever else you desire. Toss thoroughly to coat. Marvel at the length of the noodles. You can't tell from the photo, but let's just say that's a bigger bowl than it looks.
