Ingredients

¼ cupolive oil
1 poundground turkey
preferably not super lean the more fat, the better
salt
1yellow onion
large, finely diced
6garlic cloves
minced
1 tablespoonground cumin
1 tablespoonred chile powder
2 x 4 ounceroasted green chiles
cans
1 x 28 ouncecan diced tomatoes
with their juice
1 x 15 ouncecan beans
pinto, cannellini, navy, black beans.., whatever
Instructions
Step 1
Place the olive oil in a large, heavy pot (such as a Dutch oven) over medium-high heat. Use your hands to break the turkey into small pieces directly into the pot. Season generously with salt and cook, stirring now and then, until a little bit browned, about 5 - 10 minutes.
Step 2
Add the onion, garlic, cumin, chile powder, and a big pinch of salt and cook, stirring now and then, until the onions begin to soften and brown in spots, about 10 minutes.
Step 3
Add the chile peppers with their juice, tomatoes with their juice, the beans with their liquid, and another big pinch of saltt. Bring the mixture to a boil and then immediately lower the heat to a gentle simmer.
Step 4
Cover with the lid slightly ajar to let some steam escape. Cook, stirring now and then, until all of the flavors have melded, about 20 minutes. Season to taste with salt one final time before serving.
