Ingredients
12 servings
2 cupssugar
1 cupeggs
¾ cupoil
2 cupsflour
salt
2 tspcinnamon
2 tspbaking soda
1 tspvanilla
3 cupscarrot
grated
For the Icing
Instructions
Step 1
Preheat oven to 350 f
Step 2
Beat together sugar, eggs, and oil.
Step 3
Combine in a separate bowl the flour, salt, cinnamon, and baking soda.
Step 4
Slowly add the dry ingredients into the butter mixture
Step 5
Stir in vanilla
Step 6
Gently fold in the carrots
Step 7
Pour into a greased 8" round cake pan and bake for 45 mins
For the Icing
Step 8
Whip the cream cheese with a mixer to soften it.
Step 9
Beat in the rest of the ingredients until smooth
