Ingredients

4 tspcanola oil
2 ozchorizo
crumbled such as, Natural Vegan choriza Seitan Crumbles
1.5 lbsboneless skinless chicken breasts
diced into bite-sized pieces
2cloves garlic
minced
1scallion
trimmed and minced
4 cupscauliflower rice
⅛ tspsaffron
optional
1 cupdiced tomatoes
1 cupgreen beans
cut into 1/4 inch pieces
¼ tspsalt
¼ tsppepper
Instructions
Step 1
In a large skillet, heat oil on medium high and cook the seitan chorizo crumbles and chicken until brown, but not cooked through.
Step 2
Add the garlic and scallions and sweat for about 2 minutes.
Step 3
Add the cauliflower rice, saffron (if using), tomatoes, and green beans to the paella. Cook for about 10 minutes, season with salt and pepper, and serve hot.
