Yes. I said pancake bacon cookies. It’s important you use complete buttermilk pancake mix, the kind you just add water to. You can adjust how much bacon and chocolate chips according to taste. You can even leave out the chocolate if you’re not a fan. These are delicious

Step 1
Placed the bacon on a baking sheet and sprinkle evenly on top with brown sugar. Bake at 350 for 20 minutes or until bacon is golden. Cool. Bacon will crisp up as it cools. Once the bacon cools, chop it and set aside. Mix the pancake mix, butter and maple syrup in a bowl until well combined dough. Add the bacon and chocolate chips to the dough and mix well. You can adjust how much bacon and chocolate chips you want or leave the chocolate chips out all together. Drop tablespoon size balls of the dough onto a parchment lined cookie sheet. Bake at 350 for 10 to 12 minutes. Cool. These cookies need to be stored in a refrigerator.
