Buttery Mashed Potatoes

These use both Russet and Yukon gold potatoes and have a good amount of butter!

Instructions

Step 1
Place potatoes in a pot with enough cold water to fully cover them. Add salt so the water tastes like sea water. Heat over medium heat until you can easily stick a fork through them (about 20 mins).
Step 2
Drain water. While potatoes are still hot remove the peels (they should slide off easily, but you’ll need a pot holder to hold them). Cut them up into quarters and put back in the pot. Cook over medium heat for 1 minute while stirring, so the moisture inside can evaporate.
Step 3
Remove from heat and add butter. Stir until butter is melted.
Step 4
Heat crushed garlic and half and half over medium heat until warm but not boiling. Add to potatoes a little at a time and stir.
Step 5
Add pepper and salt. Taste and add more salt if necessary- don’t be shy about adding a lot.
