Ingredients
6 servings
2 tablespoonsextra virgin olive oil
1.5 Poundchicken breasts
boneless, ski less, or thighs
kosher salt
ground pepper
2 tablespoonssalted butter
4garlic cloves
minced or grated
1 cupdry orzo
1 cupdry white wine
such as Pinot Grigio, or Sauvignon Blanc
1 ¼ cupslow sodium chicken broth
1 x 8 ouncemarinated artichokes hearts
jar, drained and roughly chopped
½ cuppitted green olives
1lemon
zest and juice of
½ cupfeta
cubed or crumbled, for serving
1 tablespoonfresh dill
chopped, for serving
Instructions
Step 1
Preheat oven to 400F
Step 2
Heat olive oil in large Dutch oven or skillet on medium heat Season chicken with salt and pepper
When oil simmers, add chicken and sear until golden, 3-5 minutes per side.
Transfer chicken to large plate
Step 3
In the same pan, combine butter garlic and orzo and cook until garlic is fragrant and the orzo is toasted, 2-3 minutes.
Add the wine to the skillet and scrape up any browned bits from the bottom of the pan. Stir in the chicken broth, artichokes, green olives, lemon zest and lemon juice. Increase heat to high and bring to a boil.
Step 4
Return chicken and any collected juices to the pan.
Transfer to oven and roast until chicken is completely cooked through, about 15 minutes.
Step 5
Serve chicken and sauce topped with feta and fresh dill.
