Aloo mushroom curry

This is my interpretation of a popular Indian dish.
You can substitute the spices for curry paste and the coconut milk for vegan cream.

Step 1
Heat the olive oil in a saucepan, add the onion and potato. Cover, then cook over a low heat until the potatoes start to soften. Throw in the spinaches and mushrooms, then cook for a few more mins. During this blend the tomato with the stock ( you can skip this and add the tomato chopped in cubes with the mushrooms).
Step 2
Stir in the spices , pour over the stock. Leave with for 2 minutes on medium fire. Then add the coconut milk and let it boil for 10 minutes. Add the cheese and let it cook until the potato is tender ( if they aren’t already).
You can eat it alone , with naan ou rice .
