Instructions

Step 1
Whisk together the flour, cinnamon and baking soda in a medium sized bowl.

In a different bowl, cream the butter and sugar until light and fluffy. Add egg and vanilla. Mix until incorporated.

Add flour mixture to the whipped butter mixture and mix well.

Fold in the oats. Let the dough rest in the fridge for at least 1 hour.
Step 5
After the dough has rested, let it warm back up for about 10 minutes at room temperature. Preheat oven to 350.

Using parchment or non-stick spray, line 2 cookie sheets.

Weigh out 50 gram dough balls and roll into balls (You can also use a scoop. It’s just important that they are relatively the same size). Place 8 on each sheet pan and press down to spread them out slightly.

Bake for 10 minutes, rotate the pan then bake for 2 more minutes. You want them brown around the edges but not completely browned.
Step 9
Let rest for about 10 minutes before filling.

Filling

Whip all ingredients together until fully incorporated. Scoop into a piping bag or ziplock bag to make the cookie sandwich.
