Step 1
Prepare the chicken by tenderizing each chicken breast. In a large bowl mix together the buttermilk, egg, paprika, salt and pepper. Give it a good stir and add the chicken breasts, cover them fully with the batter mixture. Cover the bowl with cling foil. Let it marinate in the fridge for 3,4 hours or overnight.
Step 2
In a large bowl mix together the flour, baking powder, paprika, oregano, thyme,basil, onion powder,garlic powder, salt and pepper. Give it a good stir. Take a piece of chicken from the batter mixture and put it into the flour mixture, cover the chicken very well by using your hands. Transfer them to a wire rack, keep distance between each breast. Deep fry the chicken for about 7,8min. The temperature of the oil should reach about 320F.
Step 3
To prepare the truffle mayo mix together 3tbsp of mayonnaise and 1tbsp of black truffle oil. Assemble the burger and enjoy!
