Instructions
Step 1
Preheat oven to 375° F. Spray an 8-inch square baking pan with vegetable cooking spray. In a small bowl, combine 2 tablespoons of flour and raisins; toss to coat.
Step 2
In a large bowl, combine remaining flour, oats, brown sugar, baking powder baking soda cinnamon, and salt. Mix well.
Step 3
In a medium bowl, combine milk, oil, egg, and vanilla. Mix well. Add milk mixture to flour mixture, stirring until just moistened. Do not over-mix. Fold in raisin mixture.
Step 4
Spoon batter into prepared pan. Bake until a toothpick inserted in the center comes out clean, about 30 minutes. Place pan on a wire rack and cool for 10 minutes. Cut bread into squares; serve warm.

Step 5
When mixing quick bread batters, stir liquid ingredients into dry ingredients until just moistened. Over-mixing creates a heavy, tough bread.

For extra-tasty bread, with fuller flavor, bake and cool as recipe directs. Cover bread tightly in plastic wrap and store at room temperature overnight.
