In water, drained
0.5 CupVeggie Broth
0.5Red Onion
1 CloveGarlic
2 TbspCholula Hot Sauce

2 Tbsptomato paste
1 TbspRice Malt Syrup
1 tspcumin
1 tspsmoked paprika
0.5Juice of Lime
salt

Spicy Cashew Dipping Sauce:
0.5 CupCashews
Soaked in hot water for 10 minutes and drained
0.5 CupSoy Milk
1 CloveGarlic
1 TbspCholula Hot Sauce

1 Tbsptomato paste
½ tspsmoked paprika
0.5juice of lemon
salt
pepper
To Serve:
Instructions
Step 1
Heat olive oil and on a fry pan over medium heat. Add onion and sauté for 3 minutes or until translucent. Add garlic and sauté for a further minute.
Step 2
Add veggie broth, tomato paste, Cholula Original Hot Sauce, rice malt syrup, cumin, smoked paprika, lime juice, jackfruit, salt and pepper and mix well. Cook for 5-6 minutes or until all the sauce is absorbed and remove from heat.
Step 3
Place all spicy cashew sauce ingredients into a blender and blend until smooth. Add more soy milk if needed.
Step 4
To serve, heat your corn tortillas on a fry pan. Add the jackfruit, tomatoes, jalapeños and cashew sauce. Garnish with coriander and enjoy!
