Cheesy Egg-In-A-Hole with Bacon Jam
Originally from an "Every Plate" box recipe. The bacon jam is amazing and can be served on a number of proteins - burgers, chicken, etc.
I definitely have doubled the bacon jam to save for use later in the week :-)

Instructions
Step 1
Preheat oven to 425 degrees F
Step 2
Dice tomato into 1/2 inch pieces
Step 3
Halve, peel and finely dice shallot
Step 4
Chop bacon into bite-size pieces. Heat a drizzle of oil in a large pan over medium-high heat. Add bacon and cook, stirring occasionally, until crispy, 5-7 minutes (lower heat if bacon begins to brown too quickly.)
Step 5
Reduce heat to medium; add tomato, shallot, 1tsp sugar, salt and pepper (to taste). Stir in 1TBSP water; cook, stirring occasionally until mixture is thickened and jammy, 7-10 minutes. Cover to keep warm
Step 6
Using a small cup or biscuit cutter, cut a circle from the center of each bread slice. Lightly oil sheet pan; arrange bread slices and bread rounds on pan. Crack one egg into the hole of each bread slice (it's OK if egg whites spill out from under slices); season generously with salt and pepper and top with shredded cheese.
Step 7
Bake in oven on top rack until eggs are cooked to desired doneness and cheese is melted (around 7-10 minutes).
Step 8
Serve eggs-in-a-hole on plates, topped with bacon jam and a toasted bread round on the side.
