Instructions
Step 1
Pre-heat the oven to 180C/Gas Mark 4. Line baking trays with parchment paper.
Step 2
In a large bowl, cream together the butter and sugar until pale.
Step 3
Stir in the condensed milk.
Step 4
Sift in the flour and work into a soft dough with your hands or a beater.
Step 5
Mix in the white chocolate chunks.
Step 6
Take a small handful of dough and flatten it with your fingers. Place 2 - 3 raspberries into the centre of the cookie and fold over the sides of the dough to encase the raspberries.
Step 7
Repeat with the remaining dough to make 20 - 30 cookies.
Step 8
Place on a parchment lined baking tray, spaced well apart, and bake for 15 - 18 minutes or until golden brown at the edges but still a little soft.
Step 9
Leave to cool slightly and set, then transfer to a wire rack to cool completely.
