Instructions
Step 1
Preheat oven to 350°F. Peel and rinse potatoes.
Step 2
Cut potatoes into quarters and place in a large bowl along with the juice of 1 lemons and spices. Combine well with hands.
Step 3
Pour potato mixture into to a glass baking dish or casserole dish.
Step 4
Next, pour the water into the corner of the baking dish – NOT over the potatoes or you will end up rinsing the lemon and spices off the potatoes.
Step 5
Cover dish with aluminum foil or oven-safe lid. Bake for 45 minutes or until soft.
Step 6
Remove foil/lid, turn the heat up to 425°F and continue baking for another 15-20 minutes or until edges start to brown.
Step 7
Cut the remaining lemon into wedges to squeeze over potatoes as desired.
