300gpasta
2 spoonsOlive Oil
1 lbBeef mince
low fat %
Soffritto Mix
Carrot, Onion, Celery
2Garlic Cloves
fresh or frozen
1 tinchopped tomatoes
Italian brand is best
100gtomato passata
2 tablespoonstomato purée
1 teaspoongarlic italian seasoning
1Red Wine Stockpot
1Beef Stockpot
30mlmilk
Grated Parmesan
or any hard cheese / gran padano etc
dried parsley
Instructions
Step 1
Fry the Soffritto mix and garlic in a glug of olive oil until softened. Add the mince and fry until brown. Drain any excess fat off the mince.
Step 2
Add the tomato purée and mix well until the meat is coated. Add some Italian seasoning.
Step 3
Add the red wine stock pot, beef stock pot and the tomato passata. (You do not have to dilute these in water if you want a thicker mixture). Mix well to combine and add the tin of chopped tomatoes. You can also sub in a drop of red wine or a beef stock cube.
Step 4
Add a drop of milk to the mixture to give it a velvety texture.
Step 5
Bring to a bubble, then reduce the heat to low and cover with a lid. Leave it on the heat for the maximum time possible, ideally ~ 4-6 hours to allow the flavour to develop.
Step 6
Serve with spaghetti and a slice of garlic bread. Garnish with chopped parsley and a generous amount of parmesan!
