Instructions

Step 1
Heat the oil in a skillet or frying pan, add the garlic and chile, and cook for 5 minutes, or until the garlic browns.
Step 2
Remove the garlic from the skillet and add the tomatoes, season with salt, and cook for about 15 minutes.
Step 3
Meanwhile, cook the penne in a large saucepan of salted, boiling water until al dente, then drain and add to the skillet.
Step 4
Toss over high heat for a few minutes, then transfer to a warm serving dish and sprinkle with the parsley.
