Instructions
Step 1
Line a 9 x 5-inch glass bread pan with unbleached parchment paper, Place the dates, shredded coconut, currants, cinnamon, and vanilla pow- der in a food processor fitted with the "s" blade.
Step 2
Process the mixture for about 30 seconds, and then add the remaining ingredients, Process again until combined.
Step 3
Pour the mixture into the prepared bread pan.
Step 4
Place it in your freezer for about 1 hour to set.
Step 5
Cut into bars with a very sharp knife, Serve.
Step 6
Keep any leftover bars in the freezer until ready to serve--they will become soft at room temperature
Step 7
Tip: To melt coconut butter, place a few large spoonfuls in a small saucepan and melt on the stovetop over the lowest heat, then measure out Ys cup.
