My mother in law's recipe. A fan favorite. And she had many fans. Some unexpected twists in this one, including a fair amount of oregano and, gasp... CANNED mushrooms. It's super simple. Completely different. And likely about to be one of your new go-to favorites.

In a large pot sauté the diced onion in the olive oil for a few minutes over medium heat. Turn the heat up a little. Add the beef and brown. When the beef has just a little pink left in it, add the chopped garlic and stir. Now add everything else. The tomatoes, tomato paste, mushrooms, cinnamon, oregano, bay leaves, salt and pepper to taste. Stir, cover and simmer for 30 minutes. You can get your water for the pasta on the stove while the simmer of the sauce begins. Boil your favorite pasta. I love bucatini for this, but traditional spaghetti is great. Strain your pasta and put in a large bowl. Brown the butter. You can use just 2 tablespoons but for full effect, you can add another. Look for the butter to turn to a nice brown. Pour butter over the pasta. Now grate some fresh parm onto the pasta and give it a stir. Plate your pasta and spoon the sauce over. Garnish with fresh parm and some chopped parsley. Kali Orexi!
