Instructions
Step 1
Pre heat the oven to 140c - gas mark 1 - 120c fan
Step 2
Slice the potatoes finely using a mandolin. Then add to the bowl with the goose fat and the Puréety Original potato seasoning
Step 3
Line a loaf tin with greaseproof paper and proceed to layer the potatoes up in the tin, place another sheet of greaseproof paper on top of the potatoes and press down firmly
Step 4
Cook the potatoes in the oven for 2.5 - 3 hours or until the potatoes are cooked
Step 5
Once cooked, use tins e.g. baked beans on top to keep the potatoes pressed down and place in the fridge for a minimum of 12 hours
Step 6
Take the potatoes out of the fridge and portion into 4 slices (use a ruler or tape measure for precision)
Step 7
Fry in oil @180c until crispy and golden brown
Step 8
Sprinkle with sea salt and enjoy
