Instructions

Step 1
Finely chop the mince, bacon and chillies before mixing in a large bowl with the bbq sauce
Step 2
Form into whatever size patties you like and chill in the fridge for 30 minutes
Step 3
Preheat a grill pan in the oven to 220°C; 200 Fan and bring the burgers to room temperature
Step 4
Assemble the pre-mayonnaised burger buns: bun, lettuce, pickles, tomato, red onion, bun with bbq sauce
Step 5
Melt plenty of butter in a pan and cook the chopped white onions with the leftover bacon
Step 6
While the onions are cooking, glaze the burgers with bbq sauce and place on the hot grill, in the oven to cook for 3 minutes a side
Step 7
After the 3 minutes are up, turn the burgers once more and place on the cheese slices
Step 8
As soon as the cheese melts, carefully transfer the burgers to the buns
Step 9
Top with, in this order: jalapeños, bacon, fried onions and ketchup
