Loaded rice
This is my favorite way to use up leftover rice. The rice can go from side dish to main dish. You can serve it with pain yogurt or a tomato cucumber salad.
1 pounds ground beef with parsley and onion
1 tsp olive oil
1 1/2 tbs 7 spice
2 tsp salt
1/2 tsp garlic powder
1/4 tsp black pepper
Toasted pine nuts or almonds
3 cups cooked rice
1 bag frozen mixed veggies
In a skillet over high heat add olive oil and ground beef cook until browned then add seasoning and frozen mixed veggies. Cook an additional five minutes stirring occasionally. Add cooked rice and toasted almonds mix well to combine serve with a tomato cucumber salad or plain yogurt and enjoy.
