Creamy bacon broccoli penne (low salt low carb)

Bacon broccoli wholemeal penne with a creamy garlic chives sauce made with low fat sour cream and a sprinkle of Parmesan. Low carb and low sodium. No added salt. All the flavour comes from the bacon and butter. And for those at the table needing more salt, just add more Parmesan.

Instructions
Step 1
Bring a pot of water to boil and add the wholemeal penne. They take a while to cook.
Step 2
In the meantime, slice the onion. Cut the florets of the broccoli. Dice the bacon. Crush the garlic. Finely cut the chives.
Step 3
Place the broccoli with a splash of water in a microwaveable bowl with lid. Cook on high for 5 minutes.
Step 4
Add the bacon to a non stick frying pan and cook on high heat for 5 minutes until browned.
Step 5
Add the onion and cook for another few minutes.
Step 6
Remove the broccoli from the microwave and add the bacon and onion to it. Set aside.
Step 7
Place the frying pan back on the stove on high heat and add the butter and garlic. Cook for 1-2 minutes until the garlic has softened.
Step 8
Add the sour cream and a cup of pasta water. Stir for a creamy sauce. Add the chives and let the sauce simmer to thicken.
Step 9
Drain the penne, which should be done by now.
Step 10
Place the penne back into the pot, add the broccoli and onion. Pour the sauce over it and add the grated Parmesan. Give everything a stir and then divide into 4 bowls. Grind some black pepper over it. Enjoy!

Absolutely delicious and easy to make. Used garlic and herb soft cheese instead of sour cream

I added more sour cream so it wasn’t dry.
Also added siracha sauce ( about a tablespoon) to give it some zing . Chives didn’t bring much to the flavour but basil could also work
