Pork Adobo - Ilocano Style

I learned this recipe from my mother, who is from Cagayan (near Tugegarao in northern Luzon). I never had a written recipe until now. It’s all about the vinegar:shoyu ratio! I like mine more on the vinegar-y side.

Instructions

Step 1
1. Slice pork into chunks - 1.5”-2” cubes - & put into a big mixing bowl.s

2. Pour Datu Puti Vinegar and soy sauce over pork.
Step 3
3. Add 1 tsp ground black pepper over pork mix.
Step 4
4. Mix well (hand mix is the best!) & set aside

5. Mince garlic.
Step 6
6. Heat cooking oil in large sauté pan (or Dutch oven) over medium-high heat.
Step 7
7. Once oil is warm, sauté minced garlic until fragrant.

8. Pour pork mix in sauté pan.

9. Mix & stir in pan.

10. Add 1 tsp ground black pepper over pork and mix.

11. Add bay leaves and carefully mix (to avoid breaking up bay leaves).

12. Bring to a boil.
Step 13
13. Cover and Simmer on low heat for 1.5 hours.
Step 14
14. Uncover and stir occasionally for 2-3 minutes. Most of the marinade is evaporated and most of the fat is rendered to make a nice “sauce” to pour over your rice. ENJOY!
