Stuffed Artichokes is one of the favorite delicious Lebanese dishes, made with Artichoke bottoms stuffed with minced beef, diced onion and pine nuts, cooked in a delicious lemony sauce.

Instructions

Step 1
Wash the artichoke bottoms and put it in a pot of boiling water.
Step 2
In a pot with boiling water, add 1 teaspoon of lemon juice, couple of lemon slices, pinch of salt then drop in the artichoke bottoms and boil it on medium-low heat for 15 minutes.
Step 3
Meanwhile you prepare the artichoke filling, in a large skillet with tablespoon oil sauté the finely diced onion until wilted.
Step 4
Add the ground beef and the toasted pine nuts to the onion, and stir until the beef is light brown and all water evaporates.
Step 5
Add the salt, spices and and stir for a minute then before you turn off the heat add the pomegranate molasses stir once and remove it and set aside.
Step 6
Remove the artichokes from the boiling water, keep 2 cups for the sauce and drain the balance.
Step 7
To Prepare the sauce, in a skillet on medium heat, put the ghee (or butter) add the dissolved flour water, the balance of lemon juice and keep stirring until you get a white lemony sauce thickened.
Step 8
We stuff the artichokes with ground beef mixture, and arrange it an oven tray, pour the white lemony sauce between the stuffed artichoke bottoms.
Step 9
Preheat your oven 200C, cover the tray with aluminum foil and place it in the mid shelf and cook it for 30 minutes, then another 10 minutes uncovered.
Step 10
We serve the stuffed artichokes with rice cooked with or without vermicelli as desired, and extra sauce can be provided separately.
