If you don’t want to bake whistlers in the oven, you can fry them in a skillet with some oil. Of course, whistlers baked in the oven are less in calories, but it just depends how everyone likes to make them. Before mixing mashed potatoes with egg and flour, it is important that potatoes would be completely cold. I mash potatoes while they are a little bit warm, but then I wait for them to cool down completely. It is also not necessary to cut the whistlers into diamond shape, you can cut them into larger or smaller pieces of the desired shape.

Boil the potatoes with skin, then cool them down, peel and mash. Add the egg into mashed potatoes, season with salt and mix. Then add flour and knead the dough.

Preheat the oven to 200 C (400 F).

Take ¼ of the dough and place it on a floury table surface. Roll the dough into a long string, then flatten it. You should get a ~1/2 cm (0.2 inch) thickness and 3-4 cm (1-1.5 inch) width strip. Cut the strip into desired size diamond shapes. In this way make all the whistlers.

Lay down a sheet of parchment paper on the oven tray, place the whistlers (that they wouldn’t touch each other) and spread them with melted butter. Bake in a preheated oven for 15 minutes, then turn over and bake for another 15 minutes. Transfer baked whistlers into a bowl and keep them warm.
Step 7
Sauce – peel the onion, dice it. Dice bacon as well. Add onion and bacon in a skillet and fry until onion softens. Then pour in heavy cream, add fresh dill, stir and heat up over medium heat. When the sauce begins to thicken, take off from the heat and mix it in one bowl with whistlers. If you want that the whistlers be softer, keep them covered with sauce in a bowl (~15 min) before serving. Enjoy your meal!
