Instructions
Step 1
Slice squash in halves. Cook squash with salt in a pot of water for 20-30 minutes after bringing to a boil. Let cool
Step 2
Sauté chopped onion in oil for 10 minutes
Step 3
Add mushrooms and sautee another 15 minutes
Step 4
Core squash and add to onions & mushrooms
Step 5
Add matzah meal and cook for another 3 minutes
Step 6
Add egg and mix well
Step 7
Add cheese and sprinkle salt and cook for 5 minutes, mixing in between
Step 8
Scoop mixture into cored squash shells and bake for 35-45 minutes on 350
