Coffee Cake Cookies

Spiced cookies with streusel center. Original recipe is vegan. I made with regular ingredients. Vegan just substitute 1 tablespoon ground flaxseed mixed with 3 tablespoons water and let sit till thickened. Then use vegan butter and plant based milk for icing.

Instructions

Step 1
Beat butter and sugars till light and fluffy
Step 2
Make flax egg for vegan or add 1 regular egg and beat 30 seconds
Step 3
Add in all purpose flour, cinnamon, cardamom, baking powder, and salt. Add flour first and then other ingredients on top. Mix in until thick dough forms and is soft.
Step 4
Cover bowl with plastic wrap and refrigerate from 30 minutes to 1 hour.
Step 5
Make streusel filling. Add flour, sugar, cinnamon, cardamom and cold butter. Mix in food processor or break up with fork to get crumbly mixture that holds together.
Step 6
Set streusel aside and preheat oven to 350 about 10 minutes before taking dough out of refrigerator, and line baking sheets with parchment paper.
Step 7
Remove dough from refrigerator and scoop out 12 cookies(large cookies) roll into balls and press down middle with thumb and use fingers to make larger. Place one tablespoon filling in middle of cookie. Once filled, bake for 13 to 15 minutes. Don't overbake. Remove and let sit 5 minutes then transfer to wire rack till cooled.
Step 8
Make icing by mixing all icing ingredients. When cookies are cool, drizzle icing over cookies.
