Instructions

Preheat oven to 375

Slice bacon into small pieces

Dice mushrooms, peppers, onions, and tomato

Thaw spinach, wash and squeeze out all water remains until dry.

Add bacon into medium size pan, cook on medium 3-5 minute until bacon begins to cook through.

Add veggies and cook until softened.

Whisk together 7 eggs in a medium size bowl. Add a dash of salt and pepper then add bacon and veggies into the same bowl.

Grease muffin pan, and add 1/4 cup of egg mixture into each section of muffin pan

Bake at 375 for 13-15 minutes until eggs are slightly brown on top.
Step 10
Remove from muffin pan and garnish with parsley or green onions.
