Rishti Bi Adas or “Pasta with Lentils”

This is a variation of a traditional Lebanese dish called “Rishti Bi Adas” or Pasta with Lentils, it’s a comforting and inexpensive dish requiring minimal ingredients, since you may use any leftovers pasta shapes in your pantry, it’s a vegan recipe and a good source of plant based protein, fiber and vitamins, easy to prepare and ready in about 30 minutes.

Instructions

Step 1
In a pot, heat 1 tablespoon oil and fry the onions with pinch of salt about 3 to 4 minutes until translucent, add ground coriander, garlic, & fry for a minute or 2 until fragrant.
Step 2
Boil the drained lentils in the stock or water for 15–20 minutes, until tender. Add salt, throw in the pasta, and boil vigorously until the pasta is done al dente.
Step 3
Drain quickly, stir in the fried onion mixture, adjust the seasoning, cover it and move to last step.
Step 4
In a small saucepan with 1 tablespoon olive oil, fry the red chili for 1 minutes, toss in the fresh springs onion, remove from the heat immediately, pour it on top of the Rishti and serve hot.
