1 tspcinnamon powder
20 ozjackfruit
3 Tbspbrown sugar

Instructions
Step 1
I a large skillet, heat oil over a medium heat. Once hot, add onions, cumin seeds, garlic and bay leaf, leave to fry to a minute or so, until the onions go soft and translucent.
Step 2
Add garam masala, turmeric, coriander, ginger and cayenne pepper and mix well. Add coconut milk, cinnamon powder and jackfruit. Roughly pull jackfruit before adding to skillet. Add sugar and salt and leave to cook for around 15 minutes or so on a medium heat.
Step 3
When the mix thickens, add water, mix together and taste. Adjust salt and spices if necessary. Reduce heat to medium low and leave to cook for a further 10-15 minutes or until desired consistency. Garnish with cilantro and serve.
