Instructions
Step 1
Preheat the oven to 180 degrees Celsius. Ready an ovenproof dish. Peel and finely dice the onion. Drain and rince the black beans
Step 2
In a saucepan on medium heat, add a drizzle of oil. When hot, sweat the onion for about 2 -3 minutes until softened. Add the taco spice and fry for 1 - 2 minutes until fragrant.
Step 3
Add the cooked chopped tomatoes and simmer for about 8 minutes until reduced by a quarter. Stir through the black beans and corn. Taste to test and season.
Step 4
In the meantime, make your salsa. Rince and roughly chop the coriander. Dice the baby tomatoes. Add the coriander and diced tomatoes to a bowl with a drizzle of olive oil and season. Set aside
Step 5
Add the black bean chilli to an ovenproof dish. Sprinkle over the grated cheese and bake for about 5 - 8 minutes or until the cheese is golden.
Step 6
Plate up the black bean chilli, nachos, sour cream and salsa. Tuck in!
