GREENS, EGGS AND HAM

5 steps
Cook:15min
Ditch the sugary cereals once and for all. They don't provide you with 'sustained energy' like the adverts say. It's all lies and marketing. This breakfast is high in protein and healthy fats and is exactly what your body needs. Don't get that nasty cheap re-formed meat, though... head to the deli counter for the real stuff.

Instructions

Step 1
Preheat your grill to maximum.
Step 2
Heat the butter in a frying pan over a medium to high heat. When hot and bubbling, chuck in the mushrooms and tomatoes. Fry the ingredients for 2 minutes, stirring every now and then- it's nice to let the mushrooms colour a little. Season with salt and pepper.
Step 3
Add the spinach to the pan and toss with the mushrooms and tomatoes until wilted. Reduce the heat to medium to low, arrange the ingredients into a pile and move them to one side of the pan. Crack the eggs into the other side of the pan and let them fry on the base for 1 minute.
Step 4
When you are happy the eggs have cooked on the bottom, slide the whole pan under the grill and cook for about 1-2 minutes depending on how well cooked you like your eggs.
Step 5
When ready to eat, place your ham slices onto a plate with the mushroom and egg mix - sprinkle artistically with a few chilli flakes to give your day a proper kick-start.
