Instructions
Step 1
Prepare a pot of boiling water with 1 teaspoon of salt.
Step 2
In a large enameled saucepan, combine the guanciale and 3 tablespoons of olive oil. Cook for 5 minutes over a quiet flame.
Step 3
Drop the pasta into the boiling water.
Step 4
When the guanciale is golden, remove from the heat and add the remaining oil
Step 5
Once the pasta is cooked, add the egg yolks to the pan with the guanciale, but don't mix them in yet.
