Instructions
Step 1
Brush halved squash with oil and roast until almost tender, ~30-40 min.
Step 2
Sauté onion, apple, garlic, sausage, and sage until sausage is cooked through. Cool slightly, then mix in breadcrumbs and Parmesan. Season with salt and pepper to taste.
Step 3
Remove squash from the oven, and fill each half with sausage filling. Top with remaining Parmesan and bake for 20 min until golden-brown.
