Instructions
Step 1
Sift together both flours, salt, and cinnamon into a bowl. Set aside.
Step 2
In a stand mixer with paddle attachment, combine butter, brown sugar, and honey. Beat until fluffy, about 5 minutes.
Step 3
Add the dry ingredients in 3 additions, beating until just combined after each addition. Wrap the dough tightly in plastic wrap and refrigerate at least 30 min before rolling.
Step 4
Heat oven to 350. Line Baking sheets with parchment paper.
Step 5
On a floured work surface, roll the dough to ¼ inch. Punch out cookies using preferred cookie cutter and space about ½ inch apart on sheet pan. Bake 10-12 min until golden brown.
