Ingredients

1green zucchini
1yellow zucchini
0.5red onion
diced
6roma tomatoes
1orange bell pepper
1yellow bell pepper
diced o
1green bell pepper
diced
1jalapeño
seeds removed, minced
½ cupfresh cilantro
finely chopped
1can kidney beans
rinsed and drained
1 x 15 ozcan black beans
rinsed and drained
1can garbanzo beans
1avocado
diced, or guacamole
1 table spoonLime juice
¾ cupItalian dressing
1 teaspooncumin
½ teaspoonchili powder
1 teaspoongarlic powder
kosher salt
to taste
freshly ground pepper
Instructions
Step 1
1. Toss beans, corn, tomatoes, bell peppers, jalapeño, and red onion together in a large bowl.
Step 2
2. Season with salt and pepper, cumin and garlic powder, then add avocado and fresh cilantro.
Step 3
3. Mix gently with Italian dressing until everything is moistened.
Step 4
4. Taste and adjust seasoning, if necessary.
Step 5
5. Refrigerate for 15-30 minutes before serving. Enjoy!
