Instructions
Step 1
1. Chop the salmon very finely, taking care to ensure that there are no large lumps. You can do this in a food processor if you want butI don't like extra washing up. It's easy if you use a super sharp knife.

2. Combine all ingredients thoroughly in a bowl. If you have time, refrigerate now for 10 mins so that the mixture is easier to work with, but this is entirely optional.
Step 3
3. Shape the mixture in to 6 equally sized patties and lightly fry for 3-4 mins on each side in a tablespoon of flavourless oil on medium heat. The salmon is very finely chopped so it won't take long to cook.
Step 4
4. Drain any excess oil (there will be very little) on some kitchen roll and serve immediately.
