Instructions

Step 1
Season the chicken with salt and pepper. Beat the egg and water in a wide shallow bowl. place coconut in another. Dredge chicken in egg then roll in coconut.

Cook in air fryer until golden brown. Original recipe said bake at 425 about 10 minutes on a foil lined pan sprayed with cooking spray.

Meanwhile finely chop pineapple, onion, cilantro and combine with lime juice and generously season with black pepper

Recipe said serve chicken with salsa. I thought cutting chicken in pieces and blending in salsa might be good.
