Instructions
Step 1
Mince the green onion and cut the daikon into small pieces.
Step 2
Scrub the okra with salt to remove the fuzz on the peel, and leave it for 1 minute.
Step 3
Add the water to a pot and cook the daikon.
Step 4
Wash the okra, cut off the tops and chop into small pieces.
Step 5
Put the ground meat into a bowl and add a pinch of salt. Next add the sake, soy sauce, minced green onion and grated ginger. Knead by hand.
Step 6
Make small meatballs using 2 spoons and place them in the boiling water. Skim the foam off the top of the soup.
Step 7
Add the okra and simmer for 1-2 minutes.
Step 8
Turn off the heat and dissolve the miso paste in a ladle filled with soup water. Once it's dissolved, stir to combine it with the rest of the soup.
Step 9
Last but not least, add the hondashi and stir.
Step 10
Serve with rice or noodles or just on its own!
