Step 1
Cut the pumpkin, peeled and take off the seeds, cut it into large cubes, fold in a foil or parchment envelope, pour over with olive oil, sprinkle with caraway seeds and bake in the oven for 25-30 minutes until tender.
Step 2
Grate the ginger root and lime zest on a fine grater. Squeeze the juice from the lime half. Stir the olive oil with lime juice, salt, sugar, grated ginger and zest
Step 3
Wash arugula and let it dry a bit
Step 4
Cut cherry tomatoes in halves, cut Feta in small cubes
Step 5
Put arugula on a plate, add pumpkin, cherry tomatoes and feta cheese on top. Add dressing.
