1 cupred chili powder
or 10 to 15 whole chili pods
½ cupsweet paprika
1 teaspoonfenugreek
1 teaspooncoriander
1 teaspoongreen cardamom seeds
2 teaspoonblack pepper
¼ teaspooncloves
½ teaspooncinnamon
1 teaspoonallspice
4 teaspoonscumin
1 teaspoonground ginger
1 teaspoonssalt
½ teaspoonground nutmeg

Instructions
Step 1
Whole Spices:
1) In a dry skillet over med high heat, toast the whole spices (seeds) and chilies, shaking the pan regularly to prevent scorching, until fragrant, 3 to 5 minutes. Remove from heat, add ground spices and toast for about 1 minute. Transfer to a bowl and let cool 2) Grind the cooled spices in a spice or coffee grinder. Add salt and grind everything together.
