Instructions

Sushi rice

Step 1
Rinse the rice under cold water until the water is clear
Step 2
Boil the water and add the rice Cook with a lid on low heat for 15min. Then turn off the heat and put a (paper) towel between the pot and lid. Let the rice rest for another 5-10min.

Add the rice vinegar, salt and sugar and give it a quick stir Let the rice cool on a plate while preparing the other ingredients

Crunchy prawns

Step 4
To a bowl add the egg, milk and seasoning. Whisk until well combined. To another bowl add the panko.
Step 5
First soak the prawns in the egg mixture and then in the panko.

Heat up the oil in a small pan. Leave the heat on high. Add the prawns and fry for 1,5min.

Sandwich

Step 7
Put half of the rice on the nori sheet and spread evenly. Sprinkle on half of the white and black sesame seeds.
Step 8
Turn the nori sheet and repeat on the other side.
Step 9
Drizzle on the sriracha mayo. Then cut the nori sheet in half and slice the avocado.
Step 10
Top one half with the salmon slices, prawns and avocado.
Step 11
Place the other nori sheet on top and enjoy!
